
Kason and I try our best to eat good well rounded meals but we don't always do it! It is sooooo hard for me to work all day, then come home and play with Griff and also find the time to cook. I am horrible at meal planning ahead of time. I know that I could do easy crock pot meals that basically cook themselves while I work all day. Like I said though, I am terrible at planning ahead and pregnancy (mostly the first trimester) makes me so dang lazy. My house has also suffered but that's another story. I also don't cook dinner because Kason is usually out of town all week so why the heck would I make a meal for picky little Griff and I? No thank you! So we end up eating some pretty strange stuff for dinner. So I felt like I needed to cook something good tonight. Last night I made ground turkey tacos but the only veggies we consumed were the one's in the tacos. I made a recipe out of a book called 'Deceptively Delicious' and it was downright amazing. Sounds crazy because it was only Mac and Cheese but it was made with pureed cauliflower and let me tell you, it was SO good. Kason and Griff both loved it and chowed down. We also had yummy salads to go with our meals. Thankfully, Griff likes salad too. This cookbook has been out for a while but I am just now getting around to trying it. I am sure you can find it out there for way cheap! I think I am going to puree a bunch of veggies to have them on hand for when I am ready to make another one of these yummy recipes.

I feel the same about working and finding time to cook! I just bought that book, in hopes that we will b able to eat more healthy. I can't wait to try the recipes.
dang, i want that cook book! well actually i'm way lucky cuz nate's such a good eater. but seriously the first trimester is the worst for cooking and feeling lazy. ugh i totally understand. good job though on giving the cooking thing a try. (i never cook when nate's out of town). so i made a six week calendar of dinners (leaving some days blank for leftovers) and I can use the same grocery list each week. i never have to "think" about what to make for dinner. i shop every monday and the week is planned! i also have a list of alternatives if something on the menu doesn't sound good that week. it's really helped me cook and eat better.... just an idea!
I think I may have to start using this book with Max soon. I saw her on Oprah and thought this was a fantastic idea...using pureed veggies in your meals. Thanks for the inspiration!
